I spend a great deal of time searching for creative ways to make veggie burgers. After numerous failed attempts, (just ask Whitney) I usually revert back to the Garden Burger recipe; I got during a Whole Foods cooking class years ago. I even packed up a batch and took to girls weekend recently. (along with a good bottle of red wine)
Although, there are a numerous choices at your local grocery store, it kills me to eat one out of a package!
The recipe makes about 12 burgers. I try and make a batch over the weekend and freeze them; so I have burgers throughout the week. Or crumble them up in a wrap!
Ingredients:
- 3 cups of sunflower seeds
- 3 cups of grated carrots
- 1 cup of minced celery
- ½ cup of minced red onion
- ¼ cup of olive oil
- ½ cup of lemon juice
- ¼ cup of ground flax seeds
- 1 tsp of your favorite seasoning
- 1 tsp garlic powder
- 1 ½ tsp of sea salt
- 1/8 tsp of cayenne
(you can vary the veggies or add raisins for a little sweetness)
Instructions:
(You will need a good sized food processor and may need to process in two batches)
Place sunflower seeds in a food processor and grind to fine meal. Add to a mixing bowl with remaining ingredients. Place back into food processor until well mixed, but still a little chunky. Use ½ cup per patty and bake at 350 degrees for about 15 minutes on each side.
Top with avocado, tomato or your choice of cheese. Try making your own vegan cashew cheese. (recipe coming on future post).
