Fast and Easy Cashew Yogurt Recipe

Cashews are a vegans best friend, allowing us to make all kinds of cheeses, sour cream and even amazing ice cream, giving dairy some competition. I've had great success with many of these recipes but was unable to find a good quality and easy yogurt recipe. Until now! 

Recipes need to be simple and quick to get my attention. Too many ingredients and steps lose me immediately. Recently, I made several attempts to make a vegan yogurt, but the eight hour wait time and low quality taste made me go back to my favorite store bought brand, Kite Hill, a dairy and soy free greek yogurt. I even researched buying electric yogurt machines but the wait time for yogurt was still all day. 

Then I found this recipe, adapted it a little, and taste tested it with family and friends. It's a keeper. Only problem is it's best eaten within two days - but no problem in my house!

Blend the following:

One cup of cashews, soaked overnight, drained and washed

1 TBS of fresh lime

¾ cup of coconut water

2 ripe bananas

1 TBS of probiotics (Moon Juice is my favorite)

½ tsp of vanilla

⅛ tsp of salt

Optional: Blend in a few soaked dates or touch of stevia

Enjoy it with fruit and granola for breakfast or as a dessert!
